Recipe for the Day:
Sweet Onion & Roasted Broccoli Pita Pizza

Ingredients
  • 2 whole Whole Wheat Pita Pockets
  • 1 Tablespoon Yogurt Butter (Brummel & Brown)
  • ½ whole Vadalia Onion, Sliced Thin
  • 2 cups Roasted Broccoli, Chopped
  • 1 wedge The Laughing Cow Light Creamy Swiss
  • 1 Tablespoon Parmesan Cheese
  • 1 Tablespoon Yogurt Butter (Brummel & Brown)
  • 2 Tablespoons Skim Milk
  • 1 teaspoon Each - Salt, Black Pepper, Garlic Powder & Crushed Red Pepper Flake (to Taste)

Preparation

1. Spray pan with cooking spray and place 2 cups roasted broccoli, chopped, salt and peppered, in 425 degree oven for 10-12 minutes.

2. Melt butter in a skillet. Once melted, add thinly sliced onions, salt and pepper to taste. Don’t touch them! Turn skillet to medium heat and allow to cook, stirring only occasionally for 10-15 minutes until soft and golden brown.

3. Lightly toast pitas in 400 degree oven until just beginning to crisp.

4. Top each pita with half of my fantastic cheese sauce* (see recipe below), half of the onions and half of the broccoli. Pop pitas back into oven for about 5-7 more minutes until pita is crunchy.

*Creamy Cheese Sauce
1 wedge of The Laughing Cow Light Creamy Swiss
1 Tbsp Parmesan Cheese
1 Tbsp Brummel and Brown Butter
2 Tbsp Skim Milk
1 tsp each of Salt, Black Pepper, Crushed Red Pepper Flake and Garlic Powder (to taste more or less)

In a small sauce pan, melt 1 tbsp of butter and then add Parmesan & The Laughing Cow wedge, then the milk and then seasoning. Keep stirring until mixture melts completely.
